Add the shiitake mushrooms and cook for 3 minutes until slightly softened.
Add the chopped kale and simmer for another 2-3 minutes until bright green and tender but still maintaining some texture.
Remove from heat and stir in the sesame oil. Taste and adjust seasonings if needed.
Ladle into bowls and garnish generously with sliced green onions.
