Marinated Mushroom Appetizer

Tender cremini mushrooms poached and marinated in a flavorful herb and vinegar mixture. Perfect make-ahead appetizer that improves with time.

 

Ingredients

  • 1216 oz cremini mushrooms, cleaned with stems on
  • 4 garlic cloves, divided (2 smashed, 2 minced)
  • 6 sprigs fresh thyme, plus 1 tsp chopped leaves, divided
  • 1 small sprig fresh rosemary
  • 2 bay leaves, divided
  • 1/2 tsp kosher salt (for poaching water)
  • 1/4 cup finely diced shallot
  • 1/4 cup olive oil
  • 2 tbsp white vinegar
  • 2 tbsp red vinegar
  • 3/4 tsp Italian seasoning
  • 1/4 tsp kosher salt, plus more to taste
  • 1/8 tsp black pepper
  • 1/41/2 tsp crushed red pepper flakes
  • 1 tsp chopped fresh thyme leaves
  • 1 1/2 tsp chopped fresh parsley, plus more for garnish
  • 1/4 cup thinly sliced red onion
  • 1/21 cup quartered artichoke hearts
  • 12 tsp lemon juice (optional)

Instructions

  1. Simmer 4-5 cups water with smashed garlic, thyme sprigs, rosemary, bay leaf, and salt.
  2. Add mushrooms and poach 3-5 minutes until just softened. Drain well.
  3. In a non-metal bowl, combine minced garlic, remaining bay leaf, shallot, olive oil, vinegars, all seasonings, herbs, red onion, and artichoke hearts. Whisk until blended.
  4. Add warm mushrooms to marinade and gently coat. Taste and adjust seasoning, adding lemon juice if desired.
  5. Cover and refrigerate at least 5 minutes; preferably 8+ hours for best flavor. Stir occasionally.
  6. Bring to room temperature before serving. Garnish with fresh parsley.

Notes

These marinated mushrooms will keep refrigerated for up to 10 days and improve with time. Serve as part of an antipasto platter or with crusty bread to soak up the flavorful marinade. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
