Ingredients

  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded gruyère cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 8 large portobello mushrooms
  • Pinch of salt
  • Pinch of black pepper
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 6 slices turkey bacon or beef bacon, cooked and chopped

Instructions

  1. Preheat oven to 400°F. Cook bacon until crisp, then chop into small pieces.
  2. Combine cheeses, herbs, and seasonings in a bowl. Remove stems from mushrooms and slice caps into 1/2-inch pieces.
  3. Create three layers in a 2-quart baking dish: mushrooms, cheese mixture, bacon, and seasonings.
  4. Mix heavy cream with minced garlic and pour evenly over layers. Cover with foil.
  5. Bake for 30 minutes until mushrooms are tender. Remove foil and pour off excess liquid if desired.
  6. Broil for 4-5 minutes until top is browned and bubbling. Let rest 5 minutes before serving.

Notes
