Ingredients

  • 2 medium Savoy cabbages
  • 4 tbsp olive oil, divided
  • Salt and pepper
  • 8 oz mushrooms, sliced
  • 6 slices turkey bacon, chopped
  • 4 tbsp butter
  • 1/3 cup all-purpose flour
  • 2 garlic cloves, crushed
  • Pinch nutmeg
  • 3 1/2 cups milk
  • 2 tbsp mustard
  • 1 1/2 cups cheddar cheese
  • 1/2 cup Parmesan cheese
  • 1 tsp thyme
  • Salt and pepper
  • 1/2 cup cheddar (topping)
  • 1/4 cup Parmesan (topping)
  • 1/2 cup panko
  • 2 tsp rosemary
  • 1 tbsp olive oil (optional)

Instructions

  1. Preheat oven to 400°F. Roast cabbage wedges with oil, salt, and pepper for 25 minutes until edges caramelize.
  2. Sauté mushrooms until golden brown. Cook turkey bacon until crispy.
  3. Make sauce by creating a roux with butter and flour. Add garlic, nutmeg, then gradually whisk in milk. Add mustard, thyme, and both cheeses.
  4. Reduce oven to 375°F. Arrange cabbage in a 9×13 dish, top with mushrooms and bacon, then pour sauce over.
  5. Combine topping ingredients and sprinkle over casserole.
  6. Bake 25–30 minutes until golden and bubbling. Rest 5-10 minutes before serving.
