16 oz fresh mushrooms, sliced (mix of cremini, button, or shiitake)
2 large onions, thinly sliced
6 oz feta cheese, crumbled
⅓ cup olive oil, plus extra for brushing
2 tablespoons fresh thyme leaves
1 large egg, beaten (for glaze)
3 cloves garlic, minced
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 tablespoon balsamic vinegar
2 tablespoons fresh parsley, chopped
¼ cup grated Parmesan cheese
Instructions
Preheat oven to 375°F (190°C) and brush a large baking sheet with olive oil.
In a large skillet over medium-low heat, warm 2 tablespoons olive oil. Add thinly sliced onions with a pinch of salt. Cook slowly, stirring occasionally, for about 25-30 minutes until deeply golden. Add balsamic vinegar in the last minute, then transfer to a bowl.
In the same skillet, heat 2 tablespoons olive oil over medium-high heat. Add mushrooms and cook without stirring for 2-3 minutes to brown. Continue cooking until moisture evaporates, about 5-7 minutes. Add minced garlic and cook for 30 seconds.
Return caramelized onions to the skillet with mushrooms. Add thyme, salt, and pepper. Stir to combine and remove from heat. Allow to cool slightly.
Place one sheet of phyllo on the oiled baking sheet, brush lightly with olive oil. Layer another sheet on top, slightly offsetting the corners, and brush with oil. Continue this process with 6-7 sheets total, reserving 1-2 sheets for the top.
Spread the mushroom-onion mixture evenly over the phyllo layers, leaving a 1-inch border. Sprinkle with crumbled feta and Parmesan cheese.
Gently place the reserved phyllo sheet(s) over the filling, tucking in edges. Brush the top with beaten egg.
Bake for 20-25 minutes, rotating halfway through, until the phyllo is crisp and golden brown.
Remove from oven and let cool for 5-10 minutes. Sprinkle with fresh parsley, slice, and serve warm.
Notes
For extra flavor, try adding a handful of baby spinach or a sprinkle of pine nuts to the filling.
Work quickly when handling phyllo dough, keeping unused sheets covered with a damp kitchen towel to prevent drying out.
The mushroom-onion filling can be prepared up to 2 days in advance and refrigerated.
