Mushroom Chicken Curry

A fragrant, flavorful curry combining earthy mushrooms and tender chicken in an aromatic spiced tomato sauce.

 

Ingredients

  • 1 green chili, seeds removed
  • 1 small onion or half of a large onion
  • 3 garlic cloves
  • 2 teaspoons grated ginger
  • A small handful of mint leaves
  • A small handful of cilantro
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • ½ teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1.3 pounds mushrooms (portabella or cremini), sliced or halved
  • 1 pound boneless chicken breast or thighs, cut into bite-size pieces
  • 1 can whole tomatoes (14 ounces)
  • Olive oil, as needed
  • Salt, to taste

Instructions

  1. Pulse chili, onion, garlic, ginger, mint, and cilantro in a food processor until finely chopped.
  2. Heat oil in a skillet over medium heat. Add cumin and mustard seeds, toasting until fragrant.
  3. Add the aromatic mixture and sauté for 3-4 minutes until raw onion smell fades.
  4. In a separate pan, brown chicken pieces and transfer to the main pan.
  5. Sear mushrooms in batches until browned and add to the main pan.
  6. Add turmeric and garam masala, stirring to coat everything.
  7. Pour in tomatoes with juices, breaking them up slightly. Season with salt.
  8. Simmer for 15-20 minutes until chicken is cooked and sauce thickens.
  9. Serve with rice, flatbread, or naan.

Notes
