For the Sauce

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Herbes de Provence
  • 1 red bell pepper, diced
  • 1 can (14 ounces) crushed tomatoes
  • 1 teaspoon balsamic vinegar
  • Salt and black pepper to taste

For the Vegetables

  • 3 medium tomatoes, peeled and sliced
  • 1 small zucchini, sliced
  • 1 small yellow squash, sliced
  • 1 small eggplant, sliced
  • 3 medium potatoes, peeled and thinly sliced
  • 1 cup mushrooms, thinly sliced
  • Salt and black pepper to taste
  • 1 1/2 cups shredded melting cheese
  • Olive oil for drizzling

Instructions

  1. Heat oil in a pan over medium heat. Sauté onion until soft, then add garlic and Herbes de Provence, cooking for 1 minute. Add red bell pepper and cook for 3 minutes.
  2. Add crushed tomatoes and simmer for 10-15 minutes. Stir in balsamic vinegar, then blend until smooth. Season with salt and pepper.
  3. Preheat oven to 425°F. Slice all vegetables thinly.
  4. Spread tomato sauce in a 9×13-inch baking dish. Arrange vegetable slices in alternating rows or spiral pattern, including mushrooms.
  5. Season with salt, pepper, and herbs. Drizzle with olive oil.
  6. Bake for 45 minutes until vegetables are tender and starting to brown.
  7. Top with shredded cheese and bake 5-10 minutes more until cheese is melted.
  8. Let rest 15 minutes before serving.
