Oatmeal Raisin Cookies

Classic chewy oatmeal raisin cookies with warm spices and plump raisins.

  • 1 cup (2 sticks) unsalted butter, softened, OR 1 cup shortening
  • 1 cup brown sugar (light or dark), packed
  • 1/2 cup plus 2 tablespoons (10 tablespoons) granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1 1/2 cups raisins
  • 1/2 cup chopped walnuts, optional
  • 3 cups rolled oats (old-fashioned or quick; do NOT use instant)

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Beat butter until creamy, then add sugars and beat until fluffy (about 3 minutes).
  3. Incorporate the eggs one at a time, beating well after each addition. Stir in vanilla.
  4. In a separate bowl, mix flour, salt, baking soda, cinnamon, and nutmeg.
  5. Add dry ingredients to wet mixture and stir until just combined.
  6. Fold in raisins, optional walnuts, and oats.
  7. Drop tablespoons of dough onto baking sheets, leaving 2 inches between cookies.
  8. Bake 10-12 minutes until edges are golden but centers still appear soft.
  9. Cool on baking sheet for 1 minute, then transfer to wire rack to cool completely.

Notes

For chewier cookies, slightly underbake and allow them to finish setting on the baking sheet.
