Ingredients

  • 1 pound ground beef (or turkey, chicken, or pork)
  • 3 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth (or chicken broth)
  • 1 cup shredded cheddar cheese (or preferred cheese)
  • 1 tablespoon olive oil
  • Fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 8-10 minutes until starting to soften. Remove and set aside.
  2. In the same skillet, cook ground meat over medium heat until fully browned (5-7 minutes). Drain excess fat if needed.
  3. Add chopped onion, bell pepper, and minced garlic. Stir in all seasonings and cook for 3-4 minutes until vegetables soften.
  4. Return potatoes to the skillet and add broth. Stir to combine, cover, and simmer for 5 minutes until potatoes are tender and liquid reduces.
  5. Sprinkle cheese evenly over the mixture. Cover and let melt for 2-3 minutes until bubbly.
  6. Garnish with parsley if desired and serve hot.
