2 cups day-old orange brioche bread, cut into 1-inch cubes
2 cups whole milk
1/2 cup heavy cream
3 large eggs
1/4 cup orange zest
3 tbsp melted butter
1/4 cup granulated sugar
1 tsp pure vanilla extract
1/4 tsp salt
1/2 cup fresh orange segments (optional)
2 tbsp turbinado sugar (optional, for topping)
1/4 cup chopped pistachios (optional, for garnish)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
In a large mixing bowl, whisk together milk, heavy cream, eggs, orange zest, sugar, vanilla extract, and salt until well combined.
If using very fresh brioche, spread cubes on a baking sheet and toast at 300°F for 5-7 minutes to dry slightly.
In a separate bowl, gently toss bread cubes with melted butter until evenly coated.
Add the buttered bread to the custard mixture and fold gently until all pieces are coated. Let sit for 15-20 minutes, occasionally pressing bread down to ensure absorption.
Fold in fresh orange segments if using.
Transfer the soaked bread mixture to your prepared baking dish. Sprinkle turbinado sugar over the top if desired.
Bake for 30-35 minutes until the top is golden brown and the center is set but still slightly jiggly.
Remove from oven and let rest for 10-15 minutes before serving.
Garnish with chopped pistachios and a light dusting of powdered sugar if desired.
Notes
For the best texture, use day-old bread or toast fresh bread slightly to help it absorb the custard better.
This pudding can be prepared the night before and refrigerated. Let stand at room temperature for 20 minutes before baking, adding 5-10 minutes to baking time.
Check for doneness with an instant-read thermometer (170°F in center).
