  • 2 cups fresh orange juice
  • 1 cup water
  • 2 tablespoons unflavored gelatin (about 2 envelopes)
  • 1/2 cup granulated sugar
  • 1 tablespoon fresh orange zest
  • 1 cup whipped cream (for garnish, optional)
  • 1 teaspoon vanilla extract (optional)
  • 1 cup fresh orange segments (optional)
  • 1 cup graham cracker crumbs (optional for crust)
  • 1/4 cup melted butter (if using graham cracker crust)
  • Fresh mint leaves (for garnish, optional)
  • Fresh berries (for garnish, optional)

Instructions

  1. Select an 8×8-inch square pan or a 9-inch round pan. Lightly spray with cooking spray and line with plastic wrap, leaving overhang on all sides.
  2. Combine orange juice, water, and sugar in a medium saucepan. Heat over medium heat until hot but not boiling (3-4 minutes) and sugar completely dissolves.
  3. Remove from heat. Sprinkle gelatin evenly over the hot liquid surface. Let sit for 1 minute to bloom, then whisk vigorously until completely dissolved.
  4. Stir in orange zest and vanilla extract (if using).
  5. If adding a graham cracker crust, combine crumbs with melted butter and press firmly into the bottom of prepared pan.
  6. For fruit additions, allow gelatin mixture to cool until slightly thickened before gently folding in orange segments or other fruit.
  7. Pour mixture into prepared pan.
  8. Refrigerate for at least 4 hours, preferably overnight, until completely set.
  9. When ready to serve, use the plastic wrap overhang to gently lift the set jello from the pan.
  10. Garnish with whipped cream, additional orange zest, mint leaves, or fresh berries before serving.

Notes

  • Use freshly squeezed orange juice for the best flavor whenever possible.
  • For a creamier variation, add 1/2 cup Greek yogurt after the mixture has cooled slightly.
  • Make sure the gelatin is completely dissolved before refrigerating to ensure a smooth texture.
