Oven Fried Chicken

Crispy, golden oven fried chicken that tastes just like the deep-fried version but with less oil and mess. Perfect for an easy family dinner!

 

Ingredients

  • 1 large egg
  • ⅓ cup buttermilk OR regular milk; see notes

For the breading

  • 1 cup all purpose flour
  • 4 tablespoons breadcrumbs Panko or Italian seasoned work as well
  • 1 teaspoon baking powder
  • 1.5 teaspoons salt adjust to your taste
  • 2 teaspoons ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground pepper

For the chicken

  • 2 pounds boneless, skinless chicken breast cut into strips (I do 23 per breast)

For the pan

  • ¼ cup butter or more as needed

Instructions

  1. Preheat oven to 410°F and place a dark-colored pan in the oven to heat up.
  2. In a medium bowl, whisk together egg and buttermilk.
  3. In a separate bowl, mix flour, breadcrumbs, baking powder and all seasonings.
  4. Toss chicken pieces in the flour mixture, coating evenly and shaking off excess.
  5. Dip chicken in egg mixture, then coat again in flour mixture, pressing breading firmly onto chicken.
  6. Remove hot pan from oven, add butter and allow it to melt.
  7. Arrange breaded chicken on pan with space between pieces (cook in batches if needed).
  8. Bake for 10-12 minutes, flip carefully, then bake 5-10 minutes more depending on thickness.
  9. Broil for 1-2 minutes until golden and crispy.
  10. Let rest for 2-3 minutes before serving.

Notes

If using regular milk instead of buttermilk, add 1 teaspoon of lemon juice or vinegar to the milk and let sit for 5 minutes before using. For extra crispy results, make sure not to overcrowd the pan.
