Parmesan Asiago Cream Sauce

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 cup Asiago cheese, shredded
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Pinch of nutmeg, freshly grated (optional)

Instructions

  1. Melt butter in a heavy-bottomed saucepan over medium heat.
  2. Add minced garlic and sauté until fragrant, about 30-45 seconds, being careful not to brown.
  3. Pour in the heavy cream and bring to a gentle simmer, about 2-3 minutes.
  4. Reduce heat to medium-low and slowly add the grated Parmesan and Asiago cheese, whisking continuously until smooth.
  5. Season with salt and pepper to taste, remembering that both cheeses are naturally salty.
  6. Continue cooking for 2 minutes more, stirring constantly as the sauce thickens.
  7. If desired, add a pinch of freshly grated nutmeg for depth of flavor.
  8. Toss the sauce with cooked pasta of your choice and serve immediately.
  9. Garnish with chopped fresh parsley if desired.

Notes

  • For the smoothest texture, remove the pan from heat before adding the cheese and return to very low heat if needed.
  • Freshly grated cheese works much better than pre-packaged shredded cheese, which contains anti-caking agents.
  • If the sauce becomes too thick, thin it with a small amount of reserved pasta water or additional cream.
  • This sauce is best enjoyed immediately but can be stored in the refrigerator for up to 3 days.
