Crispy, golden parmesan crusted chicken with a perfect blend of Italian breadcrumbs, fresh Parmigiano-Reggiano, and herbs for an easy yet impressive meal.

For Breading

  • ½ cup all purpose flour
  • 2 eggs
  • ⅔ cup seasoned Italian bread crumbs (I use Progresso)
  • ⅓ cup freshly grated Parmigiano-Reggiano cheese
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary

For Chicken

  • 34 boneless skinless chicken breasts (about pounds), pounded ¼”-thick
  • Salt and freshly ground black pepper
  • ¼ cup olive oil
  • Lemon wedges, for serving

Instructions

  1. Set up three large shallow bowls in assembly line. Put flour in first bowl; beat eggs in second bowl; mix bread crumbs, Parmesan cheese, salt, pepper, and herbs in third bowl.
  2. Season chicken breasts with salt and pepper.
  3. Dredge chicken in flour and shake off excess. Dip in egg mixture, letting excess drip off. Finally, coat in bread crumb mixture, turning to coat well.
  4. Heat oil in large sauté pan over medium heat until shimmering.
  5. Add chicken breasts and cook 2-3 minutes until first side is golden brown.
  6. Flip and cook 2-3 minutes longer until chicken is cooked through (165°F internal temperature).
  7. Serve immediately with lemon wedges.
