  • 1 1/2 cup all-purpose flour (180g)
  • 1/2 cup unsalted butter, room temperature (113g)
  • 1 cup peanut butter (250g)
  • 1/2 cup brown sugar, lightly packed (100g)
  • 1/2 cup sugar (100g)
  • 1 tsp vanilla extract (5mL)
  • 1 large egg, room temperature
  • 3/4 tsp baking powder (3g)

Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Sift flour and baking powder together in a bowl and whisk to combine thoroughly.
  3. In a stand mixer with paddle attachment, cream butter and sugars until light and fluffy (2-3 minutes). Add optional 1/4-1/2 tsp sea salt if desired.
  4. Add peanut butter and mix until completely incorporated.
  5. Mix in the egg and vanilla extract, then slowly incorporate the flour mixture until the dough is just blended.
  6. Form dough into 1-inch balls and place on prepared baking sheet, spacing 2 inches apart.
  7. Create criss-cross pattern on each cookie using a fork dipped in sugar.
  8. Bake for about 10 minutes until edges are set but centers still appear slightly soft.
  9. Allow cookies to cool completely on baking sheet before transferring.
