Tender caramelized pears topped with crunchy pistachios for an elegant dessert that’s surprisingly easy to make.

 

Ingredients

  • 4 large pears (Bosc or Anjou)
  • 1 tablespoon lemon juice
  • 1/3 cup light brown sugar
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 teaspoon kosher salt
  • 34 tablespoons unsalted butter, cut into small pieces
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pistachios, toasted or raw
  • Optional: vanilla ice cream, yogurt, whipped cream, or extra nuts

Instructions

  1. Preheat oven to 400°F and prepare a baking dish large enough for all pears.
  2. Halve and core pears, peeling them if they’re very firm.
  3. Arrange pears cut-side up in the dish and drizzle with lemon juice.
  4. Combine brown sugar, spices, and salt; sprinkle evenly over pears.
  5. Distribute butter pieces over pears and drizzle with vanilla extract.
  6. Bake for 30 minutes until pears begin to soften.
  7. Flip pears cut-side down, spoon forming caramel over them, and bake another 25-45 minutes until tender.
  8. Turn pears cut-side up, spoon caramel sauce over them, and sprinkle with pistachios.
  9. Serve warm with desired toppings.
