Homemade Pistachio Cream

A luxurious, silky-smooth pistachio spread perfect for toast, pastries, or eating straight from the jar!

Ingredients

  • 1 ¼ cups shelled, raw pistachios (unsalted)
  • 4 ounces white chocolate
  • ¾ cup powdered sugar
  • 1 ½ tablespoons unsalted butter
  • ⅔ cup whole milk
  • pinch salt

 

Instructions

  1. Blanch pistachios in boiling water for 1-2 minutes, then drain and rinse with cool water.
  2. Peel pistachios by rubbing them in a kitchen towel and individually removing stubborn skins.
  3. Preheat oven to 300°F. Spread peeled pistachios on a baking sheet and toast for 5-7 minutes.
  4. In a saucepan, melt white chocolate, butter, and milk over low heat, stirring until smooth.
  5. Process pistachios with powdered sugar and salt in a food processor for 10-15 minutes until finely ground.
  6. Gradually add the white chocolate mixture to the ground pistachios, processing between additions.
  7. Continue processing until completely smooth and creamy.
  8. Transfer to an airtight container and refrigerate for up to two weeks.
