Potato Tacos

Crispy, seasoned potato tacos with fresh toppings for a delicious vegetarian meal that’s ready in under an hour.

 

Ingredients

  • 2 lbs. Yukon gold potatoes
  • 3 cloves garlic minced
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper
  • ¼ tsp salt or more to taste
  • 1 tbsp oil olive, avocado, vegetable, canola, or sunflower seed
  • 24 white corn tortillas two per taco, 3 tacos per person
  • tomatillo salsa
  • 1 lime cut into wedges for serving
  • cilantro to garnish

Instructions

  1. Preheat oven to 425°F. Cut potatoes into uniform 3/4-1″ pieces.
  2. Parboil potatoes in salted water until barely fork-tender, then drain well.
  3. Toss potatoes with oil, garlic, smoked paprika, cayenne pepper, and salt.
  4. Spread on baking sheet and roast for 25-30 minutes, flipping halfway, until golden and crispy.
  5. Warm tortillas and serve with crispy potatoes, tomatillo salsa, fresh cilantro, and lime wedges.
