  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup melted butter (plus 2 tbsp for brushing)
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon

  • 1/2 tsp salt
  • 1/2 tsp pumpkin pie spice (optional)
  • 1/4 tsp ground ginger (optional)
  • 1/8 tsp ground nutmeg (optional)
  • Pinch of ground cloves (optional)
  • 1/2 tsp vanilla extract (optional)
  • 23 tbsp buttermilk (if needed)
  • 2 tbsp cinnamon sugar (for topping, optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and any additional spices until well combined.
  3. In a separate bowl, mix pumpkin puree, melted butter, brown sugar, and vanilla extract (if using) until smooth.
  4. Make a well in the center of dry ingredients and pour in the pumpkin mixture.
  5. Gently fold together just until no dry flour remains. If dough seems dry, add 1-2 tbsp buttermilk.
  6. Turn dough onto a lightly floured surface and pat into a rectangle about 1-inch thick.
  7. Using a 2-3 inch biscuit cutter, cut straight down without twisting to create biscuits.
  8. Place biscuits on prepared baking sheet about 1 inch apart.
  9. Brush tops with melted butter and sprinkle with cinnamon sugar if desired.
  10. Bake for 15-18 minutes until golden brown and biscuits feel set.
  11. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  12. Serve warm for best flavor and texture.

  • Frozen grated butter can be substituted for melted butter for even flakier biscuits.
