Sweet summer peaches with tangy goat cheese and hot honey drizzle on crispy baguette slices.

  • 1 French baguette, sliced 1/4 inch thick
  • 1/4 cup olive oil
  • 1 pound large peaches, cut into small dice
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon kosher salt
  • 1/4 cup honey
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon hot sauce, plus more as desired
  • 4 ounces goat cheese

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Arrange baguette slices in a single layer, brush both sides with 3 tablespoons olive oil.
  3. Bake until golden brown, 15-18 minutes.
  4. In a medium bowl, combine diced peaches, basil, salt, and remaining olive oil.
  5. In a small bowl, whisk together honey, apple cider vinegar, and hot sauce.
  6. Spread goat cheese on toasted baguette slices, top with peach mixture, and drizzle with hot honey sauce.
