Reuben Casserole Bake

  • 2 cups cooked corned beef, shredded
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded (divided)
  • 1/2 cup rye breadcrumbs
  • 2 tbsp butter, melted
  • 1 small onion, diced
  • 1/3 cup Russian dressing
  • 4 oz cream cheese, softened
  • 2 tsp Dijon mustard
  • 1 tsp caraway seeds
  • 1/2 tsp garlic powder
  • 2 tbsp pickle relish (optional)
  • 1/2 cup Gruyère cheese, shredded (optional)
  • 2 tbsp green onions, sliced (for garnish, optional)

Instructions

  1. Preheat oven to 375°F and grease a 9-inch baking dish.
  2. In a medium bowl, mix softened cream cheese, Russian dressing, Dijon mustard, and garlic powder until smooth.
  3. In a large bowl, combine shredded corned beef, drained sauerkraut, diced onion, half of the Swiss cheese, and the cream cheese mixture.
  4. Spread the corned beef mixture evenly in the prepared baking dish.
  5. In a small bowl, combine rye breadcrumbs, melted butter, and caraway seeds.
  6. Sprinkle the breadcrumb mixture over the casserole, then top with remaining Swiss cheese and optional Gruyère.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown.
  8. Allow to rest for 5-7 minutes before serving. Garnish with green onions if desired.

Notes

  • For a less tangy version, rinse the sauerkraut before using.
  • Leftover corned beef works beautifully, or you can use deli corned beef sliced thick and hand-shredded.
  • This casserole can be assembled a day ahead and refrigerated before baking.
