Sweet caramelized carrots paired with zucchini hummus and vibrant green tahini sauce for an impressive appetizer or side dish.

  • 1 lb zucchini, peeled
  • 4 tbsp tahini
  • 1 tbsp light miso paste
  • 12 tbsp olive oil
  • 12 tbsp lemon juice
  • 1/3 cup chopped preserved lemon
  • 1 tbsp ground cumin
  • 2 tsp cumin seeds
  • 1 tsp sea salt
  • Freshly ground black pepper
  • 12 tsp psyllium husk
  • 1 lb baby carrots
  • 1/2 tbsp olive oil
  • 1/2 tbsp honey
  • 2 tbsp dukkah
  • Sea salt, to taste
  • 46 slices turkey bacon, cooked crisp and chopped
  • 1 bunch flat-leaf parsley
  • 1 bunch cilantro
  • 1/3 cup chopped preserved lemon
  • 23 tbsp tahini
  • 2 tbsp vegetable oil
  • 2 tbsp water, plus more as needed
  • Juice of 1 lemon or lime
  • 1 tsp fennel seeds
  • 2 tsp dukkah
  • Salt and pepper, to taste
  • Chopped toasted almonds (optional)
  • Cucumber ribbons (optional)
  • Additional olive oil and lemon juice (optional)

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss carrots with olive oil, honey, dukkah, and salt. Arrange in a single layer and roast for 15-20 minutes until tender and caramelized.
  3. Blend zucchini, tahini, miso, olive oil, lemon juice, preserved lemon, spices, and psyllium husk until smooth. Refrigerate to thicken.
  4. Combine herbs, preserved lemon, tahini, oils, water, citrus juice, and spices in a blender for green tahini sauce. Adjust consistency with water as needed.
  5. Cook turkey bacon until crisp and chop into bits.
  6. To serve, spread hummus on a plate, arrange roasted carrots on top, drizzle with green tahini sauce, and sprinkle with bacon bits.
  7. Add optional toppings like toasted almonds, cucumber ribbons, or a final drizzle of olive oil and lemon juice.

Notes
