  • pounds raw chestnuts
  • 8 tablespoons unsalted butter
  • 2 tablespoons maple syrup
  • 1½ teaspoons vanilla extract
  • 4 teaspoons instant espresso powder
  • Flaky sea salt, to taste

Instructions

  1. Preheat oven to 400°F. Bring a pot of water to boil, then remove from heat.
  2. Add chestnuts to hot water for 1 minute to soften shells. Drain and pat dry.
  3. Score an X on the rounded side of each chestnut using a sharp knife.
  4. Arrange chestnuts cut-side up on a baking sheet and roast for 22-28 minutes until shells curl back.
  5. Meanwhile, melt butter and maple syrup in a small saucepan until bubbling.
  6. Remove from heat and stir in espresso powder and vanilla until dissolved.
  7. Transfer roasted chestnuts to a bowl with cut side up. Pour hot coffee butter over them.
  8. Cover with a towel and let rest 2-3 minutes to loosen skins further.
  9. Sprinkle with flaky sea salt and serve warm.

Notes

For best results, select fresh, firm chestnuts with smooth shells. Scoring is essential to prevent chestnuts from exploding in the oven. Leftover roasted chestnuts can be refrigerated for up to 4 days or frozen for up to 3 months.
