Ingredients

  • 3 medium russet potatoes, scrubbed, ends trimmed, sliced into 12 rounds
  • Olive oil
  • Salt
  • Black pepper
  • 6 ounces beef smoked sausage, sliced into 24 pieces
  • 2 small white onions, thinly sliced
  • ½ cup low-sodium beef broth
  • ¾ cup sauerkraut, drained
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons crumbled blue cheese

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss potato slices with olive oil, salt, and pepper. Arrange in a single layer and roast for 40 minutes, flipping halfway through.
  3. In a skillet, brown sausage in olive oil. Remove and set aside.
  4. In the same skillet, sauté onions until golden, about 12-15 minutes.
  5. Add beef broth, let reduce slightly, then return sausage to the skillet.
  6. Top roasted potato rounds with sauerkraut, sausage slices, and onion mixture.
  7. Sprinkle with blue cheese and fresh parsley. Serve warm.
