Scallops Recipe

Perfectly seared sea scallops with a delicious garlic basil butter sauce that’s ready in just 15 minutes.

Ingredients

  • 12 large sea scallops, 1 ¼ to 1 ½ pounds
  • 2 teaspoons all-purpose flour, optional, see notes
  • Salt and fresh ground black pepper
  • 2 tablespoons avocado oil or vegetable oil
  • 1 ½ tablespoons butter
  • 2 garlic cloves, minced
  • 1 cup fresh basil leaves
  • 3 to 4 lemon slices

Instructions

  1. Pat the scallops dry with paper towels. Lightly coat one side with flour, then sprinkle with salt and pepper.
  2. Heat oil in a wide skillet over medium-high heat until hot and shimmering.
  3. Place scallops in the pan seasoned-side down and cook without moving until browned, about 2 minutes.
  4. While cooking, season the top side with flour, salt, and pepper.
  5. Flip the scallops (if they stick, wait a few seconds and gently wiggle them loose).
  6. Add butter and garlic, swirling as butter melts.
  7. Cook another 1-2 minutes until scallops are just cooked through.
  8. Remove from heat and stir in basil leaves and lemon slices.
  9. Serve immediately with the garlic basil butter sauce.

Notes

The flour helps achieve a beautiful golden crust but can be omitted if preferred. For best results, use “dry” scallops (not treated with phosphates) and make sure they’re thoroughly dried before cooking.
