Homemade Shake and Bake

A crispy, flavorful coating mix for chicken that bakes up perfectly in the oven every time.

Ingredients

  • 1 ½ cups plain breadcrumbs
  • 2 teaspoons sea salt
  • 1 ½ teaspoons sugar
  • ¾ teaspoon paprika
  • ¾ teaspoon onion powder
  • ¾ teaspoon garlic powder
  • ½ teaspoon freshly cracked black pepper
  • Pinch of cayenne, optional
  • 1 teaspoon dried basil or dried oregano
  • ¼ cup vegetable oil
  • 3 pounds boneless, skinless, chicken breast

Instructions

  1. Set the oven to 400°F and position the rack in the center. Line a rimmed baking sheet with foil.
  2. Combine breadcrumbs, salt, sugar, paprika, onion powder, garlic powder, pepper, cayenne and basil in a gallon-sized zip-top bag. Seal and mix well.
  3. Add vegetable oil to the bag, reseal, and mix until oil is fully incorporated.
  4. Fill a pie pan with ½-inch water. Moisten each piece of meat with water, allowing excess to drip off.
  5. Place moistened meat in the bag, seal, and shake until completely coated. Press gently to adhere coating.
  6. Transfer coated meat to the prepared baking sheet and bake until golden and internal temperature reaches 165°F for chicken (about 18-20 minutes).
  7. Do not cover or turn the meat while baking. Let rest 5 minutes before serving.
