  • 1 pound brussels sprouts, trimmed and thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup dried cranberries
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon Dijon mustard (optional)
  • 12 teaspoons honey or maple syrup (optional)
  • 1/4 cup Parmesan cheese, finely grated (optional)

Instructions

  1. Trim the tough stem ends from brussels sprouts and remove any discolored outer leaves.
  2. Cut each sprout in half lengthwise, then place flat side down and slice into thin ribbons (about 1/8-inch thick).
  3. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and Dijon mustard and honey if using.
  4. If your almonds aren’t already toasted, place them in a dry skillet over medium heat and stir frequently for 3-5 minutes until golden and fragrant.
  5. In a large bowl, combine the shaved brussels sprouts, toasted almonds, and dried cranberries.
  6. Pour the dressing over the salad and toss thoroughly until everything is evenly coated.
  7. Let the salad rest for 5-10 minutes to allow flavors to meld and sprouts to soften slightly.
  8. Serve immediately or refrigerate for up to 24 hours.

  • For best results, use a mandoline slicer or food processor to achieve thin, uniform sprout slices.
  • This salad actually improves after sitting for 30 minutes to 2 hours.
