  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp lime juice, plus extra for serving
  • 1 tbsp olive oil, plus extra for cooking
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1/2 red bell pepper, finely diced (optional)
  • 1 avocado, sliced (optional)
  • 1/4 cup cotija cheese, crumbled (optional)
  • 1/2 cup shredded cabbage or lettuce (optional)
  • Lime wedges for serving

Instructions

  1. In a medium bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt and pepper. Refrigerate for at least 15 minutes.
  2. In a large bowl, combine olive oil, minced garlic, cumin, chili powder, cayenne (if using), salt, pepper, and 1 tablespoon of lime juice.
  3. Add the shrimp to the marinade, tossing gently to coat. Let marinate for 10-15 minutes.
  4. Heat a large skillet over medium-high heat with 1 tablespoon olive oil.
  5. Cook shrimp in a single layer for 1-2 minutes per side until pink and opaque.
  6. Warm corn tortillas in a dry skillet for 20-30 seconds per side or wrap in damp paper towels and microwave for 30-45 seconds.
  7. Prepare any additional toppings like sliced avocado or shredded cabbage.
  8. Assemble tacos by placing shrimp on tortillas and topping with mango salsa and optional toppings.
  9. Serve immediately with lime wedges for squeezing over the tacos.

Notes

  • For the best flavor, make the mango salsa at least 15 minutes ahead of time to allow flavors to meld.
  • Double-layer your corn tortillas for added structure if desired.
