Slow Cooker Beef Cassoulet

A hearty, comforting beef cassoulet made simple in your slow cooker, featuring tender chuck roast, flavorful chorizo, and creamy beans.

  • 4 lb beef chuck roast, trimmed and cut into 8 chunks
  • lb beef chorizo or turkey chorizo, sliced into ½-inch pieces
  • 6 slices turkey bacon, chopped
  • 12 cups cooked Great Northern beans or cannellini beans, drained
  • 3 medium yellow onions, coarsely chopped
  • 1 head garlic, halved crosswise
  • 28 oz peeled tomatoes, coarsely chopped
  • 3 teaspoons kosher salt, divided
  • 1 teaspoon black pepper
  • 2 tablespoons canola oil
  • 2 cups chicken broth
  • ¼ cup tomato paste
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup chopped fresh parsley + extra for serving
  • 2 cups water
  • 1 cup panko-style breadcrumbs

Instructions

  1. Season beef chunks with 2 teaspoons salt and black pepper in a bowl.
  2. Heat oil in a large skillet; toast breadcrumbs until golden (4-6 minutes). Set aside.
  3. In the same skillet, cook turkey bacon until crisp (4-5 minutes). Remove and reserve fat.
  4. Brown the beef in two batches (1-2 minutes per side). Set aside.
  5. Sauté onions with 1 teaspoon salt until soft (6-7 minutes).
  6. Add tomato paste, tomatoes, broth, and lemon juice. Simmer 5-6 minutes, then transfer to slow cooker.
  7. Add browned beef, chorizo, beans, and garlic head to slow cooker. Stir gently.
  8. Cover and cook on LOW for 9-10 hours until beef is very tender.
  9. Remove garlic head, stir in breadcrumbs and parsley. Add extra liquid if needed.
  10. Let rest 30 minutes before serving. Garnish with crispy bacon and extra parsley.
