Slow Cooker French Dip Sandwiches

Ingredients

  • 2 lbs beef chuck roast
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth, low-sodium preferred
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves (optional)
  • 1 tsp dried thyme (optional)
  • 46 French rolls or hoagie buns
  • 2 tbsp butter, softened
  • 6 slices provolone cheese (optional)

Instructions

  1. Season beef chuck roast with salt and pepper on all sides.
  2. Place sliced onions in the bottom of the slow cooker, then add the seasoned beef on top.
  3. Add minced garlic, beef broth, Worcestershire sauce, and any optional seasonings (bay leaves, thyme).
  4. Cover and cook on low for 8-10 hours until beef is very tender and easily shreds with a fork.
  5. Remove the beef to a cutting board and shred with two forks, removing any excess fat.
  6. Strain the cooking liquid through a fine-mesh sieve to create the au jus, skimming off any fat.
  7. Return the shredded beef to the slow cooker with a small amount of the au jus to keep moist.
  8. Slice the French rolls horizontally (not all the way through) and spread butter on cut sides.
  9. Place rolls butter-side up under the broiler for 1-2 minutes until golden and crisp.
  10. Fill each toasted roll with a generous portion of the shredded beef.
  11. If using cheese, place on top of the warm beef and return to broiler briefly to melt.
  12. Serve sandwiches immediately with small bowls of warm au jus for dipping.

Notes

  • For maximum flavor, consider searing the beef on all sides in a hot skillet before adding to the slow cooker.
  • The sandwiches taste best when the rolls are very fresh and crusty.
  • Leftover beef freezes well for up to 3 months. Store au jus separately.
