Slow Cooker Instant Pot Smothered BBQ Beef Burritos

  • 1 lb beef chuck, cut into bite-size pieces
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp vegetable oil (for browning, optional)
  • 1 cup BBQ sauce
  • 1 cup beef broth
  • 8 large flour tortillas (10-inch)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Optional toppings:
  • 1 cup prepared coleslaw mix
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup pickled jalapeños

Instructions

  1. Season beef pieces with salt, pepper, smoked paprika, chili powder, garlic powder, onion powder, and cumin. Let rest for 15-20 minutes.
  2. Optional: Heat oil in a skillet or using the Instant Pot sauté function. Brown the beef in batches for 2-3 minutes per side.
  3. Transfer beef to slow cooker or Instant Pot. Add BBQ sauce and beef broth, stirring to combine.
  4. For Slow Cooker: Cook on low for 6-8 hours or high for 3-4 hours.
  5. For Instant Pot: Cook on high pressure for 45 minutes with 15-minute natural release, then quick release.
  6. Shred beef with two forks directly in the cooking liquid.
  7. If sauce is too thin, simmer uncovered until thickened to desired consistency.
  8. Warm flour tortillas in microwave or skillet until pliable.
  9. Assemble burritos by adding approximately 1/2 cup beef mixture to each tortilla.
  10. Top with shredded cheese and cilantro.
  11. Fold sides in, then roll up from the bottom.
  12. Place burritos seam-side down in a baking dish.
  13. Optional: Top with additional BBQ sauce and cheese, then broil for 2-3 minutes until cheese melts.
  14. Serve with your choice of toppings.

  • Choose beef chuck for the most tender results. Brisket or round roast work well too.
