  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon sweet paprika
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sea salt
  • 1 tablespoon Dijon mustard (optional, for binding the spice crust)
  • 1 teaspoon lemon zest (optional)
  • 1 tablespoon fresh thyme leaves (optional)

Instructions

  1. Remove lamb from refrigerator 30 minutes before cooking and pat completely dry with paper towels.
  2. Preheat your oven to 400°F (200°C) and place a roasting pan inside to preheat.
  3. In a small bowl, combine cumin, coriander, paprika, black pepper, minced garlic, chopped rosemary, and sea salt. Add optional ingredients if using.
  4. Brush the entire lamb rack with olive oil to ensure all surfaces are lightly coated.
  5. Apply the spice mixture evenly over all sides of the lamb rack, pressing gently to ensure it adheres well.
  6. Carefully place the seasoned rack bone-side down in the preheated pan.
  7. Roast for 25-30 minutes for medium-rare (internal temperature of 125-130°F) or 30-35 minutes for medium (135-140°F).
  8. Remove from oven and tent loosely with foil. Allow to rest for 10-15 minutes before carving.
  9. Slice between each rib bone to create individual chops.
  10. Serve immediately, garnished with fresh herbs if desired.

Notes

For the best results, use a meat thermometer to check for doneness.

The internal temperature will rise 5-10 degrees during the resting period.

If your rack has a thick fat cap, you can score it in a diamond pattern to help render it during cooking.

For a more dramatic presentation, cut into double chops by slicing between every second rib.
