Spiced Lamb Pastry Parcels

  • 1 lb ground lamb
  • 1 sheet puff pastry, thawed
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon fresh mint, chopped
  • Salt and black pepper to taste
  • 1 egg, beaten (for egg wash)
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon ground coriander (optional)
  • 2 tablespoons toasted pine nuts (optional)
  • 2 tablespoons dried currants or chopped raisins (optional)
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 teaspoon lemon zest (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat; add onion and garlic, sautéing until translucent (3-4 minutes).
  3. Add ground lamb to the skillet, breaking it up with a wooden spoon. Cook for 5-6 minutes until beginning to brown.
  4. Sprinkle cumin, smoked paprika, cayenne pepper, salt, and black pepper over the lamb mixture. Stir to combine.
  5. Continue cooking the lamb for another 2-3 minutes until fully browned and no pink remains.
  6. Remove from heat and stir in the chopped mint and any optional additions. Allow to cool for 10 minutes.
  7. While the filling cools, place the thawed puff pastry on a lightly floured surface and cut into 3-4 inch squares.
  8. Place a heaping tablespoon of the cooled lamb filling in the center of each pastry square.
  9. Brush the edges with beaten egg, then fold pastry over the filling to create triangles or rectangles.
  10. Press edges firmly with a fork to seal completely.
  11. Transfer parcels to the prepared baking sheet, spacing them 1 inch apart.
  12. Brush tops and sides with beaten egg wash.
  13. Bake for 15-20 minutes until puffed and golden brown.
  14. Remove from oven and let cool for 5 minutes before serving.

Notes

  • For a make-ahead option, prepare the filling up to two days in advance and refrigerate. You can also assemble the unbaked parcels and freeze them for up to a month.
  • For extra flavor, try adding a pinch of cinnamon or a handful of pine nuts to the lamb filling.
  • Serve with a side of Greek yogurt mixed with cucumber and dill for dipping.
