Spiced Lamb Rack

  • 1 rack of lamb (about 2 pounds)
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 2 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 23 fresh rosemary sprigs
  • 1 tsp lemon zest (optional)
  • 1 tbsp Dijon mustard (optional)
  • 1 tbsp fresh thyme leaves (optional)
  • 1 tsp honey (optional)
  • ¼ tsp crushed red pepper flakes (optional)

Instructions

  1. Remove lamb from refrigerator 30-40 minutes before cooking to bring to room temperature.
  2. Preheat oven to 400°F (200°C).
  3. In a small bowl, combine olive oil, cumin, paprika, coriander, garlic, salt, and pepper. Add any optional ingredients if using.
  4. Pat lamb rack dry with paper towels. Score the fat cap in a diamond pattern if desired.
  5. Rub the spice mixture all over the lamb rack, covering all surfaces evenly.
  6. Place the rack in a roasting pan, fat side up. Tuck rosemary sprigs alongside the meat.
  7. Roast for 20-25 minutes for medium-rare (internal temperature 125-130°F).
  8. Remove from oven and tent loosely with foil. Rest for 10-15 minutes before slicing.
  9. Carve between the bones to create individual chops.
  10. Garnish with fresh rosemary sprigs and serve immediately.

  • For the best flavor, use freshly ground spices if possible.
  • A meat thermometer is highly recommended for perfect doneness.
  • Rare: 120-125°F; Medium-rare: 125-130°F; Medium: 130-135°F; Medium-well: 135-145°F.
