Spicy Beef Noodle Soup

  • 1 pound thinly sliced beef (sirloin, flank, or ribeye)
  • 8 ounces rice noodles
  • 6 cups beef broth
  • 2 tablespoons chili paste (such as sambal oelek)
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic, minced
  • 2 green onions, sliced (white and green parts separated)
  • 1 cup bok choy, chopped
  • 1/2 cup sliced mushrooms (shiitake or cremini)
  • 1 small carrot, julienned
  • 1 teaspoon sesame oil
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving
  • Bean sprouts, for garnish (optional)
  • Thinly sliced red chili, for garnish (optional)
  • Crispy fried shallots, for garnish (optional)
  • 1 tablespoon soy sauce (optional)

Instructions

  1. In a large pot over medium heat, add 1 tablespoon neutral oil. Sauté the white parts of green onions, ginger, and garlic for 1-2 minutes until fragrant.
  2. Pour in the beef broth, add chili paste, and bring to a gentle simmer. Let it simmer for 5 minutes to develop flavor.
  3. Add the thinly sliced beef to the simmering broth and cook for 2-3 minutes until partially cooked.
  4. Stir in the rice noodles, bok choy, sliced mushrooms, and julienned carrots. Simmer until noodles are tender, about 3-5 minutes.
  5. Drizzle with sesame oil, adjust seasoning with salt or soy sauce if needed, and remove from heat.
  6. Ladle soup into bowls and garnish with green onion tops, cilantro, bean sprouts, and lime wedges. Add crispy shallots and sliced chilies if desired.

Notes

  • For less spicy soup, start with half the amount of chili paste.
  • The soup broth can be made a day ahead; just add the noodles when reheating.
  • Slice beef against the grain for maximum tenderness.
