Juicy chicken breasts smothered in tangy salsa verde and melty Monterey Jack cheese for a quick, flavorful dinner.

  • 16 ounce homemade salsa verde, (or store-bought)
  • 4 boneless, skinless chicken breasts, (6 ounces each)
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 cups grated Monterey jack cheese
  • 3 roma tomatoes, diced
  • 1/3 cup chopped fresh cilantro or parsley
  • cooked white rice, for serving

Instructions

  1. Preheat oven to 425°F and coat a 9×13 baking dish with cooking spray.
  2. Pound chicken breasts to an even 1-inch thickness.
  3. Brush chicken with olive oil and season with salt, pepper, and garlic powder on both sides.
  4. Arrange chicken in a single layer in the baking dish.
  5. Pour salsa verde over chicken, ensuring it’s completely covered.
  6. Sprinkle grated cheese evenly over the top.
  7. Bake for 20-22 minutes until chicken reaches 165°F and cheese is melted.
  8. Optional: Broil for 1-2 minutes to brown cheese if desired.
  9. Top with diced tomatoes and cilantro before serving over rice.
