Ingredients

  • 1 tablespoon olive oil
  • 1 cup finely diced mushrooms
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 bag (10 oz) baby spinach
  • 8 oz cream cheese
  • 1½ cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3 green onions, sliced
  • Salt and black pepper, to taste
  • 1 baguette
  • 3 tablespoons butter
  • 3 garlic cloves, minced
  • Grated Parmesan cheese
  • Fresh basil or parsley, torn

Instructions

  1. Preheat oven to 375°F. Cut baguette into four sections and hollow each piece.
  2. Heat olive oil and cook mushrooms until browned, then add artichokes.
  3. Add spinach in batches until wilted completely.
  4. Reduce heat and add cream cheese, stirring until melted. Add mozzarella, cheddar, green onions, salt, and pepper.
  5. Fill baguette sections with mixture and slice into 1-inch pieces without cutting through bottom crust.
  6. Melt butter with garlic and brush over baguette slices.
  7. Wrap loosely in foil and bake 15 minutes, then uncover and bake 5 more minutes until golden.
  8. Top with Parmesan and herbs; serve warm.
