  • 10 to 12 oz frozen spinach, thawed
  • 1/3 cup crumbled feta cheese
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 tablespoon oil (such as olive or canola)

Instructions

  1. Preheat oven to 350°F and generously grease a muffin tin with oil.
  2. Squeeze all excess moisture from thawed spinach using cheesecloth or paper towels.
  3. Beat eggs until light and frothy in a large mixing bowl.
  4. Add drained spinach, crumbled feta, garlic powder, onion powder, salt, and pepper. Mix gently.
  5. Divide mixture evenly among muffin cups, filling each about halfway.
  6. Bake for 20 minutes or until centers are set.
  7. Let cool for 5 minutes before carefully removing from the pan.
