Spinach Ham Puff Pastry Bites

Ingredients

  • 1 sheet puff pastry, thawed
  • 4 oz ham, thinly sliced
  • 1 cup fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella
  • 1 egg, beaten (for egg wash)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 teaspoon Dijon mustard
  • 12 tablespoons fresh herbs, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll the puff pastry sheet slightly larger and cut into 16 equal squares.
  3. In a bowl combine cream cheese, chopped spinach, mozzarella, garlic powder, onion powder, Dijon mustard, and season lightly.
  4. Place a slice of ham on each pastry square, trimming if necessary to fit while leaving a 1/4-inch border.
  5. Top each with about 1-1.5 tablespoons of the cheese mixture.
  6. Either fold the corners toward the center or top with another pastry square and seal the edges with a fork.
  7. Brush each bite with the beaten egg wash.
  8. Bake for 12-15 minutes until puffed and golden brown.
  9. Allow to cool for 3-5 minutes before serving warm.

Notes

For maximum flakiness, ensure your puff pastry stays cold until baking.

You can prepare these ahead and freeze either before or after baking.

For a vegetarian version, substitute the ham with sautéed mushrooms or olives.
