  • 1 cup grated zucchini, excess moisture squeezed out
  • 1 large egg, lightly beaten
  • 4 tablespoons olive oil
  • ¼ cup Greek yogurt
  • 1 tablespoon chopped scallions
  • 1 tablespoon chopped fresh dill
  • ½ cup crumbled feta cheese
  • ½ cup shredded cheddar cheese
  • Salt and black pepper, to taste
  • 1 cup self-rising flour, sifted

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together egg, olive oil, and Greek yogurt until smooth.
  3. Add spinach, zucchini, scallions, dill, feta, cheddar, salt, and pepper; stir until combined.
  4. Fold in the self-rising flour until mixture forms a cohesive dough.
  5. Form 2-tablespoon portions into balls, place on baking sheet, and gently flatten.
  6. Bake for 17-20 minutes until golden brown around the edges.
  7. Cool slightly before serving.
