Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, oats, and granulated sugar until well combined.
  3. Using a pastry cutter or two forks, cut in the softened butter until mixture resembles coarse crumbs.
  4. Hull and dice fresh strawberries into 1/4-inch pieces, then gently blot with paper towels to remove excess moisture.
  5. Stir in strawberry jam, pudding mix, prepared strawberries, egg, and vanilla extract until a cohesive dough forms.
  6. If using optional ingredients like white chocolate chips or freeze-dried strawberries, fold them in now.
  7. Drop tablespoonfuls of dough onto the prepared sheet, spacing them 2 inches apart.
  8. Bake for 12-15 minutes until edges are lightly golden while centers remain soft.
  9. Allow cookies to rest on the baking sheet for 5 minutes before transferring to a wire cooling rack.
