Instructions
Preheat your oven to 375°F (190°C). Place pie crust in a 9-inch pie dish, pressing gently against the bottom and sides.
Rinse strawberries, pat dry, remove stems, and slice them. Larger berries can be quartered, smaller ones halved.
In a large bowl, combine the sliced strawberries, granulated sugar, cornstarch, and fresh lemon juice. Add any optional flavoring ingredients (vanilla, cinnamon, orange zest) if using. Toss gently until berries are evenly coated.
Pour the strawberry mixture into the prepared pie crust, spreading evenly with a spatula.
Dot the surface with small pieces of unsalted butter.
Place the pie on a baking sheet and bake for 35-40 minutes, until the filling is bubbling vigorously in the center and the crust is golden brown. If edges brown too quickly, shield with foil.
Remove from oven and place on a wire rack to cool completely, at least 2-3 hours before slicing to allow the filling to set properly.
Garnish with fresh mint leaves if desired and serve with whipped cream or vanilla ice cream.
Notes
For the best flavor, use ripe, in-season strawberries that are fragrant and fully red.
If your strawberries are particularly juicy, you may want to increase the cornstarch to 4 tablespoons.
The pie must cool completely (at least 3 hours) to properly set before slicing.
