Sugar Cookie Sweet Cherry Pie Bars

  • 1 large egg, room temperature

  • 2 cups all-purpose flour

  • 1 cup sweet cherry pie filling
  • Powdered sugar for dusting (optional)

  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream butter and sugar together until light and fluffy, about 2-3 minutes.
  3. Add egg and vanilla extract; mix well until fully incorporated.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to butter mixture, mixing just until combined.
  6. Press half of the dough evenly into the prepared pan, creating a smooth base layer.
  7. Spoon the cherry pie filling over the dough and spread gently, leaving a 1/2 inch border around the edges.
  8. Crumble the remaining dough over the cherry layer.
  9. Bake for 20-25 minutes until edges are golden brown and top is lightly golden.
  10. Allow to cool completely in the pan for at least 30 minutes.
  11. Use parchment paper to lift bars from pan and transfer to a cooling rack.
  12. Once completely cooled, dust with powdered sugar if desired, then cut into bars.
