Sun Dried Tomato Pasta

  • 200g spaghetti or your favorite pasta
  • 1 cup sun-dried tomatoes, thinly sliced
  • 3 tbsp extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil leaves, torn, plus extra for garnish
  • 1/3 cup grated Parmesan cheese, plus extra for serving
  • Pinch of red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup reserved pasta cooking water

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente.
  2. Reserve 1/2 cup of pasta cooking water before draining.
  3. Meanwhile, heat olive oil in a large skillet over medium heat and sauté garlic until fragrant, about 30-45 seconds.
  4. Add sun-dried tomatoes and red pepper flakes, cooking for 2-3 minutes while stirring occasionally.
  5. Add the drained pasta to the skillet and toss to combine with the sun-dried tomato mixture.
  6. Gradually add splashes of reserved pasta water as needed to create a light sauce that coats the pasta.
  7. Remove from heat and stir in fresh basil and Parmesan cheese.
  8. Season with salt and freshly ground black pepper to taste.
  9. Serve immediately with additional Parmesan cheese and fresh basil garnish.

Notes

  • For a creamier variation, add 1/4 cup heavy cream when tossing the pasta with the sun-dried tomato mixture.
  • Oil-packed sun-dried tomatoes work best in this recipe, but dry ones can be used if rehydrated first.
  • This pasta pairs beautifully with a simple arugula salad for a complete meal.
