  • 2 medium sweet potatoes
  • 2 apples, sliced
  • 1/2 red onion, chopped
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil, divided
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 tablespoon honey
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 cup full-fat coconut milk
  • Cinnamon Pecan Topping
  • 1 cup chopped pecans
  • 1/2 cup rolled oats
  • 2 tablespoons honey
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 to 3 tablespoons softened butter

Instructions

  1. Preheat oven to 425°F. Roast sweet potatoes and apples with olive oil, cinnamon, and nutmeg for 25-30 minutes until tender.
  2. Lower oven to 375°F. Mix pecan topping ingredients and bake for 10-12 minutes until golden.
  3. In a large pot, sauté onion and garlic. Add roasted sweet potato flesh, apples, and broth, then blend until smooth.
  4. Return soup to pot, stir in coconut milk, spices, and honey. Simmer for 5-10 minutes.
  5. Serve warm topped with cinnamon pecan clusters.
