Elegant and delicious appetizers featuring roasted sweet potato rounds topped with whipped brie cheese, pecans, cranberries, and honey.

 

Ingredients

  • 1 tablespoon olive oil
  • 1 large sweet potato or 2 small ones, scrubbed and sliced into ¼-inch rounds
  • 4 ounces Brie cheese, softened and rind removed if preferred
  • 2 tablespoons milk (any type, such as 1% or whole)
  • 1 teaspoon finely chopped fresh rosemary
  • Salt and black pepper, to taste
  • ¼ cup toasted pecans, chopped
  • ½ cup dried cranberries
  • Honey, for drizzling

Instructions

  1. Preheat oven to 425°F and lightly oil a baking sheet.
  2. Toss sweet potato slices with olive oil, salt, and pepper.
  3. Arrange slices in a single layer and bake for 10 minutes, flip, then bake 8-12 minutes more until tender and lightly browned.
  4. Whip softened brie with milk until smooth and creamy.
  5. Stir chopped rosemary, salt, and pepper into the brie mixture.
  6. Top each warm sweet potato round with ½ teaspoon of whipped brie.
  7. Sprinkle with chopped pecans and dried cranberries.
  8. Finish with a light drizzle of honey.
  9. Serve warm or at room temperature.

Notes

These bites can be partially prepared ahead of time. Roast the sweet potatoes and prepare the whipped brie up to 24 hours in advance, then assemble just before serving. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
