Sweet Potato Casserole

Classic sweet potato casserole with a crunchy pecan topping – perfect for holidays and special occasions.

Ingredients

  • 45 large sweet potatoes (orange yams)
  • 3 large eggs
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
 
For the topping:
 
  • 3 Tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 cup light brown sugar
  • 1 cup pecans, chopped

Instructions

  1. Place sweet potatoes in a large pot with enough water to cover halfway. Bring to a boil, then reduce to medium simmer and cook covered until fork-tender (20-40 minutes).
  2. Drain and cool slightly. Peel potatoes and place in a large mixing bowl.
  3. Add eggs, evaporated milk, vanilla, sugar, salt, and melted butter. Mash until smooth, then beat with an electric mixer for 45 seconds.
  4. Pour mixture into a greased casserole dish (8×11″, 9×13″, or deep 10″ pie pan).
  5. For topping, combine flour, brown sugar, and pecans in a bowl. Cut in butter until well combined.
  6. Sprinkle topping evenly over sweet potato mixture.
  7. Bake in a 350°F oven for 35–40 minutes, or until the top turns golden brown.
