  • 2 cups cooked shredded chicken
  • 4 large flour tortillas (10-inch size)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 tablespoon taco seasoning
  • ½ cup diced bell pepper
  • ¼ cup diced onion
  • ¼ cup sour cream
  • 2 tablespoons cream cheese
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 tablespoon lime juice

Instructions

  1. In a small bowl, combine sour cream, 1 tablespoon cream cheese, lime juice, ¼ teaspoon each of paprika, cumin and garlic powder to make the special sauce. Set aside.
  2. Mix shredded chicken with taco seasoning, remaining garlic powder, paprika, and chili powder in a medium bowl.
  3. Sauté diced bell peppers and onions in 1 teaspoon butter for 3-4 minutes until slightly softened.
  4. Combine the vegetables with the seasoned chicken mixture and remaining tablespoon of cream cheese.
  5. Mix the shredded cheddar and pepper jack cheeses in a separate bowl.
  6. Heat a large skillet over medium heat and add ½ teaspoon butter.
  7. Lay a tortilla flat on the heated surface and sprinkle ¼ cup of cheese over half.
  8. Add about ½ cup of chicken-vegetable mixture over the cheese.
  9. Top with another ¼ cup of cheese blend.
  10. Fold the empty half of the tortilla over the filled side and press gently to seal.
  11. Cook for 2 minutes until golden brown, then add ½ teaspoon more butter before flipping.
  12. Cook for another 2 minutes until the second side is golden and cheese is completely melted.
  13. Remove from heat, let rest for 30 seconds, then slice into 3-4 wedges.
  14. Serve immediately with the prepared special sauce.
  15. Repeat with remaining ingredients to make all four quesadillas.

Notes

For best results, shred your own cheese rather than using pre-packaged shredded varieties which contain anti-caking agents.

Rotisserie chicken works wonderfully as a time-saving option.

Allow quesadillas to rest for 30-60 seconds before cutting for cleaner slices.

If reheating leftover quesadillas, use a dry skillet or oven rather than microwave to maintain crispness.
