Taco Bell Mexican Pizza Copycat

  • 8 small (6-inch) flour tortillas
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder (additional)
  • 1 cup refried beans
  • 1/2 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced green onions
  • 1 cup crushed tortilla chips
  • 1/4 cup vegetable oil (for crisping tortillas)
  • 1/4 cup taco sauce
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup sour cream (for serving)

Instructions

  1. Preheat oven to 375°F.
  2. Brush each tortilla lightly with oil on both sides and bake directly on oven rack for 5-6 minutes until golden and crispy. Set aside.
  3. In a skillet over medium-high heat, cook ground beef until halfway done, then add taco seasoning, garlic, cumin, and 1/3 cup water. Continue cooking until beef is browned and liquid is reduced.
  4. Warm refried beans in a small saucepan, mixing in 2 tablespoons of taco sauce for extra flavor.
  5. Place half of your crispy tortillas on a parchment-lined baking sheet.
  6. Spread 2-3 tablespoons of warm refried beans on each tortilla, followed by 2-3 tablespoons of seasoned beef.
  7. Place another crispy tortilla on top of each meat layer.
  8. Spread 1-2 tablespoons of enchilada sauce on each top tortilla and sprinkle with both cheddar and mozzarella cheeses.
  9. Distribute diced tomatoes, black olives, and green onions over the cheese.
  10. Bake for 5-8 minutes until cheese is completely melted and bubbly.
  11. Remove from oven and top with crushed tortilla chips, a drizzle of taco sauce, and fresh cilantro.
  12. Cut each pizza into quarters and serve immediately with sour cream on the side.

Notes

For extra authenticity, fry the tortillas instead of baking them for that signature slight chewiness.

Make sure to break the beef into very small pieces while cooking to match the texture of the original.

For best results, keep all layers relatively thin to prevent sogginess.
