  • 1 packet taco seasoning (about 2 tablespoons)
  • 1/4 cup water
  • 2 cups cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen or canned)
  • 1 ripe avocado, diced
  • 1 cup shredded romaine or iceberg lettuce
  • 1/2 cup salsa (mild, medium or hot)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 12 limes, cut into wedges
  • 23 tablespoons sour cream (optional)
  • 1/4 cup diced red onion (optional)
  • 2 tablespoons sliced jalapeños (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon as it cooks. Cook for 7-8 minutes until no longer pink and slightly browned.
  2. If necessary, drain excess fat, leaving about 1 tablespoon in the pan.
  3. Sprinkle taco seasoning evenly over the browned meat. Add 1/4 cup water and stir well to combine.
  4. Reduce heat to medium-low and simmer for 3-5 minutes, stirring occasionally, until the liquid has reduced and the meat is coated with seasoning.
  5. While the meat cooks, prepare the rice according to package directions or use pre-cooked rice.
  6. In a small saucepan, warm the black beans and corn kernels over medium-low heat for about 5 minutes.
  7. Prepare all fresh toppings: dice avocado, chop cilantro, shred lettuce if needed, and cut lime wedges.
  8. To assemble each bowl: Start with about 1/2 cup rice as the base.
  9. Add a portion of seasoned beef to one side of the bowl (about 1/4 of the total).
  10. Arrange portions of the warmed black beans and corn next to the beef.
  11. Top with shredded lettuce, diced avocado, a spoonful of salsa, and shredded cheese.
  12. Garnish with fresh cilantro and place a lime wedge on the side.
  13. Add optional toppings like sour cream, diced onion, or jalapeños as desired.
  14. Serve immediately, encouraging everyone to squeeze lime over their bowl before eating.
